Valentine’s Day Sugar Cookie Bars

With Valentine’s Day just around the corner, it’s time to start thinking about what kind of sweet treats you want to make your sweetie! While it’s completely okay to buy some chocolates or cakes from the grocery store or local bakery, going out of your way to make them something delicious from scratch can be a great opportunity to show them how much you care. These Sugar Cookie Bars are easy to make and delicious from the first bite, so your sweetheart and their sweet tooth will be so happy to receive these yummy gifts!

Sugar Cookie Bar Ingredients

Valentine’s Day Sugar Cookie Bars

  • 4 sticks (1 cup) of unsalted butter (room temperature)
  • 2 cups of granulated sugar
  • 2 eggs
  • 2 teaspoons of lemon zest
  • 1 1/2 teaspoons of vanilla extract
  • 1 teaspoon of baking powder
  • 3 1/2 cups of flour
  • 1 teaspoon of salt
Sugar Cookie Bar Ingredients
  1. Preheat the oven to 375 degrees F and line a 9 x 13 baking sheet with parchment paper. Spray with nonstick cooking spray.
  2. In an electric mixer, combine the butter and sugar together and mix on medium speed until it’s light and creamy. Add in the eggs, lemon zest, and vanilla, and mix for about a minute until everything is well combined and the eggs are beaten.
  3. In another large bowl, add your dry ingredients (baking powder, flour, and salt) and whisk together until combined. Slowly add the dry mixture into your batter, mixing a little at a time on medium speed to make sure everything is well incorporated. Continue mixing until a dough forms.
  4. Press the sugar cookie dough in an even layer across your greased pan, making sure there are no uneven bumps.
  5. Bake for 15-20 minutes until they are a light golden color and the center is set. Let cool while you make your frosting.
Cream Cheese Frosting Ingredients
  • 1 stick (1/2 cup) of unsalted butter (room temperature)
  • 8 oz. cream cheese (softened)
  • 1 1/2 teaspoons of vanilla extract
  • 4 cups of powdered sugar
Cream Cheese Frosting Recipe
  1. Beat the butter, cream cheese, and vanilla together with an electric mixer until fluffy and light.
  2. Add in the powdered sugar slowly and mix until well combined and smooth. Make sure there are no lumps in your frosting! If you want to add some fun Valentine’s Day colors to your dessert, mix in a few drops of red food coloring until your frosting is your desired shade of pink.
  3. Spread the frosting over your cooled cookie bars and decorate with your choice of sprinkles or other Valentine’s Day-themed additions!
  4. Cut and serve.

  1. This recipe sounds delish! I’d probably cut the sugar amount in half because I don’t like to eat too much sugar, but other than that it sounds good!
